Hi, I’m Kelly! The owner, operator, baker, writer, Instagrammer, dish-washer, and taste-tester behind Bare Bakery. I started weaning myself off of gluten in 2013 (specifically Wheat Thins and Healthy Choice pasta lunches), after I read Robb Wolf’s The Paleo Solution. Once I learned how the protein was damaging my insides without any knowledge or visible side effects, I began the slow but steady process of making better choices when it came to food. Tuna and Wheat Thins became tuna lettuce wraps, spaghetti and meatballs became meatballs and veggies, and it was a hard but wise choice to decline the bread basket while out to dinner.
But when it came to dessert, I found that short of making things myself, there really weren’t any available options to meet my, now strict, dietary guidelines. There was a new world of trendy gluten-free labels, but the ingredients lists were still filled with refined sugar and things I couldn’t pronounce. Enter my new love of gluten-free/grain-free/naturally sweetened baking, my eagerness to share it with everyone, and my mission for showing people that there are “better-for-you” dessert options that actually taste good!
